Burgess Buttercup (Cucurbita maxima) was the first winter squash we grew at Mano Farm and it is still our favorite! Very sweet, dry orange flesh with unrivaled creamy texture fares well thinly sliced in a stir-fry, or cut into chunks and oven roasted – seeds and all. This is simply the most delicious winter squash we have eaten. Prolific vines produce up to 10 beautiful four to five-pound dark-green fruits with subtle stripes and blocky shoulders, and a cute grey button on the bottom to boot.
